Crock Pot Country Scalloped Potatoes

Nothing beats holiday cooking like a good potato side dish! Trust me, you cannot go wrong with this one. It is husband approved. You know you have made something delicious when “every once in while”, your hubby takes one bite of what you made and says “hmmmnnnnnnn”, keeps on eating, and then finally says, “this stuff is really good!”

I stayed home from church with the kids on Sunday because they are both sick with some kind of flu/terrible cough. Hubby went alone:( Our toddler really wanted to go to church but we knew it was best to keep her home with the way she was coughing nonstop. Anyway, I guess I had time to really make a good Sunday lunch. I feel like these past few months, we have been kind of “flying by the seat of our pants” with Sunday lunches. You see, we are always running around doing all kinds of stuff on Saturdays, shopping, family activities, kids fun activities, etc. Usually, by the time we get home in the evening, usually around 8 or 9 or even 10 at times, I am just to tired out and have a million and one thing to get done to even think about what I want to do for Sunday lunch. Not good, I know. But in my defense, Saturday is the one day of the week we can run around as family and do stuff together. So why not?? Then I am frustrated on Sunday night that I still have a million and one tasks to complete before we head out the door to work/student teach/babysitter on Monday morning. In addition, we are usually up 12:00 and 1:00 am trying to do stuff, laundry to fold and iron, kids clothes to get ready, lunches to be prepared ahead of time, etc. By the way, without fail, I never get to finish folding laundry and iron (if it happens) until somewhere around Tuesday evening…ahhhhhhhhhhh

Anyway, this past weekend we stayed home all weekend. A first in many months! Our minds were relaxed and we could actually think straight. It was good for the family and for the kids, though, because they were not and still not feeling too well. Needless to say, I had time to think up a good Sunday lunch:) Oh the benefits of settling down! So I made this potato recipe and served it with baked chicken and steamed mixed veges. It was truly delicious!

  3. Looks like you have really found a husband pleaser here. Cheese and potatoes. You can’t go wrong. I love using my crock pot to cook. It makes things easier for me so that I can do all of that running around that you are talking about. Your life sounds a lot like mine. Crazy, isn’t it? I hope your babies are feeling better.
