Going Fruit Picking

We love keeping this tradition of going to fruit farms, orchards, patches to pick fruit when they are in season for the Summer and Fall. It’s an activity my husband and I enjoyed prior to having kids. Now the kids seem to enjoy it as much as we do.

In June, we picked strawberries. We almost missed it as we caught it just at the end of the season. Everyone else seemed to have come out that day, that’s according to one of the workers who didn’t seem to thrilled about it:(

We didn’t wait for the last picking day on purpose – we had traveled and I guess sort of forgot all about it. But we went and while we had to dig deep to find the berries we still got almost three full baskets. They were happy when we were done since the sun was in their faces๐Ÿ™‚

Strawberry Pie

We also went home and made a fresh strawberry pie. It was simply delicious! Although, the kids are not into strawberry pies. See instructions below for how to make this Fresh Strawberry Pie.

Fresh Strawberry Pie Recipe

Crust

  • 1-1/4 Cup All-Purpose Flour
  • 3/4 Cup Whole Wheat
  • 1 Cup Cold Butter
  • 1 tsp salt
  • 6 -8 TBSP Cold Water

Heat oven to 375 degrees. Mix flours and salt in a bowl. Cut in butter until it looks like tiny crumbs. Add in water 1 TBSP at a time mixing with a fork until dough comes together. Bake about 15 minutes. Then allow it to cool.

Fillingย 

  • 4 Cups Fresh Strawberries cut into halves
  • 1/2 Cup Water
  • 1/4 Cup Sugar (sweetener of choice)
  • 1 TBSP Corn Starch
  • 1 tsp Lemon Juice

Heat a skillet over low heat. Add berries to the pot, then pour sugar & lemon juice over it. Mix corn starch in the water until it dissolves. Pour over the strawberry mixture. Cook slightly about 2 minutes until mixture seems slightly thickened.ย  Once the crust cooled, pour the berries over it. Let it sit about 10 minutes to thicken a little more before slicing. Serve with a little whipped cream and a tiny sprinkle of powdered sugar for good looks. Enjoy!!
