Shenice’s 1st Birthday Cake

My 1st daughter, Shenice, really likes the Mickey Mouse Clubhouse show and all the characters, especially Minnie Mouse. So for her first birthday, Nov. 29, 2011, I decided to do a Minnie Mouse theme. We created her birthday invitations from Minnie Mouse and decorated colors of the like, brown, black, and pink and white polka dots. I do not know where the photos are but I know they are somewhere on one of our computers and on a few hard copies:(

The Cakes

1. The main cake

It is not perfect but hey, I think it turned out pretty well for a first time wannabe cake decorator. I think the tase was amazing! I sure wish I could find a photo with what the inside of the cake looked like when sliced.

I sat down, looked at photos of Minnie Mouse and cake ideas and came up with a plan for decorating the cake. It was a very time consuming process.

The layout of this cake: I believe I used Hershey’s recipe for layered chocolate cake

a. The main section: two round chocolate cakes, 9″ each

– with pink icing

– with strawberry ice-cream between (I made the ice-cream even brighter by adding drops of pink coloring to it)

b. The middle section: two round chocolate cakes, 8″ each

– with brown icing

-with strawberry ice-cream between

c. The ears: 2 small chocolate cakes, 7″ each

– with black icing (the ears did not turn out as high up as I desired)

-No ice-cream (actually I had to do an alternative method for the ears since the cakes fell apart and just would not stay up. I had no more fondant so I used balls of flour dough and attached them to the “head” with popsicle sticks)

– used icing tube to make  brown dots

I had also made some ice cream cupcakes (just with the cones) for extra decorations. I made a really good 5 star chocolate frosting for the cupcakes, but then decided it was too soft for what I wanted it to do. So I added some more ingedients to harden it up. Well, by the time the party rolled around, the frosting on the cupcakes were totally hard and the things just kept falling down on the tray. So much for that hard frosting – who ever heard of hard cupcake frosting!!
