Candid Spiced Nuts Recipe

This spiced nuts make a delicious Fall treat or anytime treat (really) that nut lovers can enjoy!

Not all spiced nuts are created equal. I pick and choose which to buy as I don’t like them when they’re too hard to eat. Creating a homemade version gave me the ability to roast mine to a texture that I can enjoy, not too hard, not too soft.

Spiced Nuts Recipe

  • 1-1/2 Cups Nuts (I used Pecans and Walnuts)
  • 2-3 TBSP Honey
  • 1 TBSP Olive Oil
  • 1 Egg White
  • 1 tsp All-Spice
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg

Directions:

  • Heat oven to 350 degrees.
  • Line a cookie sheet with parchment paper. Set aside.
  • Add nuts to a bowl. Stir in spices.
  • Mix Honey, oil, egg white together in a separate bowl.
  • Combine nuts with honey/spice mixture.
  • Pour and spread mixture on the lined baking pan.
  • Bake at 350 degrees for about 10 mins.
  • Remove baked nuts from the oven and allow to cool.

7th Grade Awards – 1st 9 Weeks of School

1st 9 Weeks of School Awards for 7th Grade

Apart from the fact that I cannot believe we have a child in 7th Grade, I’m pretty impressed of how she has been progressing through school this year. Last year was the first year of stepping out to school since after 2nd Grade. We were homeschooling until Grade 5. It was a timid time stepping out to a huge school with new people and trying to fit in with a ton of students who probably have already been somewhat familiar with other students there and being in school from Pre-school all the way up. But she made it. She did well subject wise but it took he a while to understand the teaching styles in Public school as opposed to homeschool and also, understanding the way the content. Now in 7th Grade, my girl seems to be thriving and understanding the work much better since she got the exposure last year. In fact, in one of her subjects, she got the highest grade, impressing the teachers and students. . . . and ultimately her parents, of course! This year, she got a medal for A & B honors. Pretty proud of this child.

We’ve completed the first 9 weeks of school and my 2nd Grader has gotten another award this year. Here are his awards last year. In the lower grades, the teachers don’t focus on graded awards but more on how the kids have progressed through the weeks of school. In first grade, it was most improved and character building awards such as responsibility, generosity, citizenship, and so forth.

I was so “proud” of my little one. The thing is, 5th Grade work seems a lot tougher than 4th Grade and understandably so. While she was doing well, we were concerned about some of the grades. They were not bad but she usually got all 100s on every paper in Grade 4. So missing 1 or 2 questions on certain assignments made us wonder. I know, one or two is not even that big of a deal right?!ย But this girl shinned again in her own way and we are very thankful!

Holiday Baking with Kids

The girls and I made these a couple of Christmases ago. They turned out so well, it was like eating Christmas cookies (see what I did there)? I don’t remember that we got around to making them last year. When I brought up making them to share on the blog, the kids were excited, especially one of the little girls who just love these.ย 

Baking with children can seem daunting, but if you set it up in a certain way and let them know the expectations, it can go smoothly. OK, maybe not but I do enjoy baking with my children. It’s very fun to bake Christmas cookies or other goodies during the holidays. Kids are most likely to try what they made.

Peppermint Kiss Blossoms Recipe

Ingredients:

  • 3 Cups Flour
  • 1 Cup Cane Sugar (or White)
  • 2 Sticks Butter, softened
  • 1 egg, beaten
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Vanilla Extract
  • 1/2 tsp Peppermint Extract
  • 1 Bag Hersey’s Peppermint Kiss Cookies
  • Note: You could substitute the 1 tsp Vanilla for another 1/2 tsp Peppermint (1 tsp Peppermint Extract total)

Directions:

  • In a large bowl, add softened butter, sugar, and extracts. Mix with a mixer (I used a handheld mixer). Beat in egg. Set aside.
  • In a smaller bowl, mix together flour, baking powder, and baking soda.
  • Pour flour mixture into the butter mixture. Mix to combine (mixture will be crumbled).
  • Use hands to gather mixture into a dough.
  • Cover dough and place in the fridge about an hour.
  • Remove dough from fridge. Let sit about 10 minutes to soften a little for easier shaping.

Baking Instructions:

  • Meanwhile, preheat oven to 375 degrees.
  • Line a cookie sheet with parchment paper and set aside.
  • Unwrap Kiss Cookies and set aside.
  • Once dough is easy to handle, scoop out small portions and shape intoย  balls.
  • Place on baking sheet. Bake 7 mins.
  • Remove cookies from oven and add a kiss in the middle of each one.
  • I’m telling you, just go ahead and eat a few. Don’t bother waiting for the cool down:)

These Peanut Butter Cookie Cups are a delicious mouthful of sweetness to add to your Fall or holiday baking!

My 12 year old daughter and I made these Reeses Peanut Butter Cookie Cups and they were a hit! OK, well maybe they’re rich and a tad sweeter because of the extra chocolate mixed with the Cookie dough, but still very tasty! They are a fun sweet treat for Fall and also for the holidays and parties.ย

Peanut Butter Cookie Cups Recipe

Ingredients:

  • 1 Pouch Peanut Butter Cookie Mix + Recommended Ingredients on the Back of the Package
  • 1 Bag Recees Peanut Butter Cups
  • Cooking Spray
  • A Muffin Tin (I used a 12 cup tin)

Directions:

  • Heat oven to recommended time on the cookie mix
  • Spray Muffin Tin with Cooking Spray, Set aside.
  • Mix Cookie mixture according to package directions.

Baking Idea 1

  • Scoop out pieces of dough into each muffin tin cup.
  • Bake cookies according to package directions.
  • Remove from oven.
  • Immediately, gently press a Recees Peanut Butter Cup into each baked cookie, while still in muffin tin cups
  • Let cool. Enjoy!

Baking Idea 2

  • Divide cookie dough into 1/2
  • Using one 1/2 of the dough, scoop out chunks into muffin tin cups
  • Add a Recees Piece into the middle of the dough in the cups.
  • Using the other 1/2 of the dough, scoop out individual pieces. Press gently over each cookie cup already in the pan.
  • Bake cookies according to package directions.
  • Remove from oven.
  • Let cookies cool. Then serve.ย

40 Under 40 Awards – My Husband Got an Award!

Have you heard of it? I had not heard of a 40 Under 40 award until I saw it on Instagram. I thought it was such a special event and an awesome way to recognize others in the community. (Yes, a rare and maybe even a first of us together showing up on the blog). I mean, I think we have other appearances from when the kids were younger – with events and family photos but you know how things get busy.

The 40 Under 40 awards recognizes Bright Young Leaders who are making a difference at work, that in-turn, impacts the community positively. Here’s more information about it. And here. We were thrilled that my husband was selected to receive such an award this year.

Women of Influence

At this ceremony, honors were given out to Women of Influence also, making it two-in-one event. More from Business Journal. I’m telling you, the work some of these women do, I’m not sure how they can keep up with anything else. This one girl received about 3 different awards for her Salon and for other jobs and side jobs she manages. One of her Salon employees also received an award. That shows how outstanding that manager really is.

Congratulations to My Husband – What an Honor!

My husband was an honoree at the ceremony! He has been a dedicated worker for as long as he’s been employed. His main role as College VP is nothing short of hard work and determination to get those students in college. He’s turned down so many job offers because so many companies in his field would love him to work for them. He’s also President of a couple other College Related groups that he travels for meetings with them on the regular.

The Award Ceremony

The event was held downtown, Charleston SC at the Francis Marion Hotel on October 25, 2023. The Award Ceremony was simply a dinner and awards. It was a fun get together with supporting co-workers and other recognized and unrecognized folks in the community. I said unrecognized because some of us were just supporters of those getting the awards:) Some of my husband’s team of workers came out to support him. It was a very fun time celebrating and watching everyone get awards both men and women. We (his co-workers and us) also got Starbucks coffee on the way out as we waited the long wait to get our cars from the parking garage.

One of my kids (eldest and youngest) favorite vegetable meal is Sweet Potatoes topped with marshmallows (and a drizzle of honey and dash of cinnamon). It doesn’t even have to be called a casserole. They just love the taste. However, when I make it into a casserole it just elevates the taste. I mean, what is better than vanilla and cinnamon mixed together in a recipe? I’ve got Caribbean roots and let me tell you, they don’t call that island the “Isle of Spice” for nothing. We LOVE our spices and food seasonings. They make the food. No one wants boring food. Not me. OK – now that we’ve got this out of the way, let’s get back to this Sweet Potato Casserole that I came here to talk about:)

You will want this on your Thanksgiving Table (well, that’s if you love Sweet Potato Casseroles). Something about the sweetness about this is just so addicting, in a good way. I separated the topping in half since the kids don’t do nuts. One of the kids can’t have pecans either. Of course, I could have used 2 different baking pans instead of just one large pan but I didn’t feel like going through the process.

Sweet Potato Casserole Recipe

Ingredients:

  • 4 Large Sweet Potatoes
  • 1/2 Stick Butter
  • 1/2 Cup Honey
  • 1 tsp Vanilla
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • Note: I don’t always add an egg. I don’t find it necessary. But you could add one beaten egg to the mixture.

Directions:

Cook Sweet Potatoes in boiling water, 20-25 mins or until tender. Allow to cook just enough to handle. Peel potatoes and add them to a large bowl. Mash with a Potato masher, large fork or spoon. Add butter, then mix. At this point, add a beaten egg if you are using eggs. Add in honey, vanilla, cinnamon, nutmeg and blend together until combined. Set aside while you make the topping.

Tips: Do not over mash the potatoes or it will turn out too soft. If using a cake mixer to combine, be careful not to over beat the mixture. You don’t want the potatoes to turn out too soft. I mean, you got to be able to chew something.

Toppings (choose one or both):

Marshmallow Topping – Marshmallows

Oatmeal Pecan Streusel Topping – Recipe Following

  • 1 Cup Oats
  • 1/2 Cup Flour
  • 1/4 Cup Honey
  • 1/2 Cup Pecans
  • 1/2 Cup Melted Butter (or cold butter, a bit softened – see note)
  • 1 tsp Cinnamon
  • 1/2 tsp Vanilla

In a small bowl, add oats, flour, cinnamon and pecans. Stir to combine. In another bowl, add honey, vanilla, melted butter. Pour over oat mixture and stir just until combined.

Note: For cold butter, add it in with oat mixture. Use a fork or hands to break up until the mixture becomes a crumble same as when making a pie dough.

Directions:ย 

Set oven to 375 degrees. Add Streusel topping over casserole. Bake about 25 minutes or until the potatoes are heated up and the streusel looks cooked.

If you are combining both toppings in one pan: Add oat-pecan topping in half of the pan. Save room for the marshmallows. Wait until 5 minutes before cooking time is done to add the marshmallows.

For marshmallow topping only: Bake casserole, add marshmallows 5 minutes before baking is done (cook a few minutes longer if it’s not melted or burnt enough to your liking.

Broil instructions – Set oven to broil. Broil marshmallows about 2 – 3 minutes. It can burn fast (like black burnt and cannot eat burnt), so be sure to monitor. If done right, broiling will give that nice brownish-burnt look like this photo. Yum!!

Once done baking, remove from the oven and allow to cool enough before serving. We prefer to eat our casseroles hot yet cook enough to eat (if that makes sense). I guess you can call that warm – but not lukewarm, if you know what I mean.

We always did a little party at the house for the kids on Halloween day. At the time, the kids were homeschooled so we were always at home on the day of Halloween. We’d do our party sometime during the day before Trick-or-Treating.ย 

I’m aware it’s Nov. 1 but I still wanted to share this post I’ve started to work on and didn’t get around to sharing it prior.

Here is what the table and food looked like at one of our parties when I went all out. See our table setting for this party here. It was very fun to put together and a blast for us (the kids and I). Dad didn’t come home early enough from work so we saved him some.

The Cakes

We definitely didn’t need two different types of cakes. However, while I knew the kids would enjoy the cupcakes, I wanted to try out making a Spider Cake for the fun of it. It turned out interesting. The cake was tasty but the looks?? I’m not sure if it’s a crab or some kind of sea creature. Ha! That was fun while it lasted.

I loved seeing the idea of Spooky Cinnamon Rolls on Instagram. I’ve seen the mummy kind and I think another type of Ghost. I wanted to put my own spin on my for our kids so I made these. The hardest part is shaping the ghosts but it’s also easy if that makes sense. I mean, how hard can this be right?! Well, not everyone is as food creative… but we made that work.

Ghost Cinnamon Rolls

What you need:

  • 1 Can of Swirl-type Cinnamon Rolls
  • Sprinkle eyes

What to do:

  • Unroll the rolls, save the icing
  • Shape each piece of dough into a simple ghost (look up easy ghost drawings online like here)
  • Bake the rolls according to instructions on the can
  • Remove from oven, let cool.
  • Drizzle icing over and add 2 eyes on each roll.
  • Serve.

This Halloween Table Setting was created for a Kids at home party and was a fun way to create excitement and add some decor to our space.

I created this fun table setting for our kids when we lived in PA. It was very fun to set up and so cute for a small party at home. I worked on the photos and somehow, didn’t get around to share them until now. At this point, I’m only sharing it because it’s just being to long hanging unto these photos and I want to keep the memories.

I used paper plates, napkins, straws, and plastic cups and straws. The straws were have a swirl and so cool to look at and to drink from. I added gold candles in my black candle holders and string lights on the table to add to the coziness of the season.ย

What You Need:

  • 2/3 Cups Corn Kernels Popcorn + Oil (or 2 bags regular popcorn in a bag)
  • 6 Blocks White Candy Melts
  • Halloween M&Ms
  • Halloween Sprinkles

Directions:

  • Pop the corn according to directions. I did not add salt.
  • Pour popcorn into a baking pan (large & deep enough to hold it)
  • Melt Chocolate (candy melt) according to the directions on the package (I use 1 tsp oil for each 3 blocks of chocolate)
  • Drizzle over popcorn.
  • Add M&Ms and Sprinkles.
  • Stir.
  • Ladle into small bowls to serve.
