Why We Waited

We waited. Well, I waited. When my son was a baby, I wanted nothing more than to keep growing his beautiful soft curls. He had the most gorgeous head of hair. Around 18 months old when the conversation came about between my husband and I about when his first haircut should be, I mentioned that I wanted to grow it out. But eventually, that beautiful hair didn’t want combs in there. So one quick hairdo turned into several and before you know it, the hair became tougher and tougher to handle.

Fast forward to 3 years old and we were on our way to a trip in the Caribbean. We took our little boy for his first haircut at the Barber’s. That was a fail. Our son was terrified of the trimming machine. The Barber suggested we wait until he was able to handle the trimming. He mentioned that it was not his first time he had a kid who was terrified of getting a haircut and it’s in the child’s best interest that we wait. So we waited.

Around the age of 6, when we enrolled him in school, we got another haircut….although it was not a full cut. It was not a low cut. Both my son and I wanted something with a bit of a high-top. It was so cute.

But when his hair grew back and said hair was a became a mess, that even a comb couldn’t go through, we had to agree with the Barber that we needed to do a very low cut and start from scratch. That was such a tough decision for every one. My little one didn’t want to have his hair cut low like his dad and he didn’t want kids to make fun of his low cut. But we knew it was in his and our best interest to have his hair cut low so we could handle it better. So we braved up and did it.

The haircut turned out so cute and my son’s hair so neat and clean… that has never looked better! But the challenge came when it was time to go to school the following day. He was a little embarrassed to go to school. I felt for him because kids will tell you as they see and my son had a hard time accepting the fact that his hair was so low. I think hind sight, we should have cut it on a time when he had a few days off school to let it grow a tad. But we wanted fresh at the moment and I as a mom just couldn’t take that previous hair anymore, to be honest.

Did the kids make fun of him?

Oh, some of them made comments of his hair that he didn’t like at all… “You are bald” was what he heard from other kids. One day, a kid shouted across the room something about him being bald. At that point, I ended up calling the school and the office transferred me to the principal. She took care of that. I didn’t hear any more complaints after that and eventually, my son grew confident with his hairstyle. And eventually, it grew back but not as long as it was before. It’s still very low now but not as low as when he got that first very low cut.

What you need: 

  • Strawberries
  • Blueberries
  • Cold Water
  • Drinking Glasses
  • Ice (optional)
  • Cool Straws (optional)

What to do:

  • Place blueberry and strawberry pieces in drinking glasses.
  • Add ice (Optional).
  • Fill glasses with water.
  • That’s it.

Note: You can add a cute straw for the kids or for whoever feels it’s cool to use a straw for their Berry-Infused Water but it’s not necessary.

To Feed a Crowd: For a larger serving, use a large clear pitcher. A clear pitcher makes the drink look pretty. Add the berries. Fill with water. Have some clear drinking glasses and straws for serving (straws can be optional but they are easier for kids).

Using Watermelon in the Summer

Watermelon is such a good fruit and a cooling type food during the summertime. However, how many times have you cut a giant watermelon? The struggle tends to be real.

It’s like my husband can’t stop buying Watermelons in the Summertime. I mean, every time he goes to buy fruits, he brings home a Watermelon. Much to my dismay! Yes, you heard that right, “much to my dismay!” You see, while I love Watermelon, there’s only so many times I desire to cut a giant one. And it’s usually the GIANT ones my husband gets.

He and the kids love them though, so I guess cutting Giant Watermelons in the summertime it shall be. The struggle continues to be real.

In any event, to make this Watermelon drink, all you need is watermelon slices and water. It’s that easy. The hardest part is cutting a giant watermelon. Once you get past that you’ll be able to easily make this cooling watermelon drink.

Cooling Watermelon Infused Water Recipe

  • A Watermelon
  • Cold Water (and or ice optional)
  • Large Pitcher
  • Clear Drinking Cups

What to do

  • Cut a Watermelon
  • Take one slice and dice it up (Use as many slices as you wish for the size of pitcher you have)
  • Place diced Watermelon on a tray and freeze

When ready to serve

  • Remove diced Watermelon from the freezer
  • Put them into the pitcher
  • Add ice (optional) – The Frozen watermelon is technically the ice
  • Add cold water or filtered water (regular water if you don’t have a choice)
  • Pour into drinking glasses for serving. Add a cute straw (optional).
  • Serve.

Note: Ultimately, you can add place a bowl of frozen watermelon on ice on the table. Scoop out pieces into individual glasses, then add water.

Isn’t that so pretty? Imagine that on your serving table at your backyard Summer party. This Cooling Watermelon drink will be the hit drink on the table:)

You can set some limits so they won’t get it all over the table and over the floor though. You’ll need to dedicate a little space and let the kids know what you expect from them as they play.

Fluffy Slime Recipe

What you need:

  • One 4 oz Bottle of Elmer’s Glue
  • 1 Cup Water
  • 1/4 teaspoon Borax
  • Shaving Cream
  • Food Coloring (optional).

What to do:

Make a Glue Combination

  • Empty glue in a bowl
  • Mix in Food Coloring
  • Add squirts of Shaving Cream (about 4 large ones)
  • Set aside.

Make a Borax Combination

  • In a second smaller bowl, add water and mix in Borax.
  • Stir until combined as much as you can get it.

Finally

  • Slowly pour Borax combination in the Glue combination while stirring with a spoon
  • The slime will begin to form as soon as you combine both.

Take your hand and pick up the slime. Pick up as much as you can and put it in a separate bowl or plate. Empty what’s remaining from the mix in the bowl. The kids can now play with the slime.

To store

Store in a small covered container or jar.

Freeze for several hours or overnight

Remove ice-cream from the freezer and use a bread knife to slice through the cracks of the crackers. Use a spatula to scoop out the individual bars.

Patriotic Graham Cracker Ice-Cream Sandwiches

Recipe:

  • 1 Box Graham Crackers
  • 1 Tub Vanilla Ice-Cream
  • 1 Tub Strawberry Ice-Cream
  • Red, White, Blue Sprinkles
  • A Big enough bowl to hold 1/2 a tub of ice-cream
  • A 9×13 Baking Pan lined with Parchment Paper

What to Do:

Run the bowl under hot water until it is hot. Add 1/2 tub Strawberry Ice-Cream to the bowl and stir until softened enough to spread.

Working Quickly:

  • Break 1 Pk of Graham Crackers & Layer them in the pan
  • Add a layer of Strawberry Ice-Cream from the bowl
  • Wash the bowl
  • Repeat steps with bowl, Graham Crackers and Vanilla Ice-Cream
  • Add Sprinkles, as best as you can
  • Place the Sandwiches in the freezer to harden.
  • Remove ice-sandwiches from the freezer.
  • Use a spatula to cut apart sandwiches within the seems.
  • Serve.

Note: The crackers will be softer than normal once the ice-cream is added to it and also, “frozen”. Just think of a regular ice-cream sandwich and how soft the top and bottom is usually. That’s how I picture it to know that I didn’t do something wrong with the recipe.

Tip: Be sure to get a good pack of Brownie Mix. The one I used is “Chewy Fudge.” From baking Brownies, I’ve learned that not all brownies are alike. Not all brands are equal so don’t just go with the cheapest you come across on the market. You want your Brownies to taste good.

You will need:

  • 1 Pack Brownies (Plus ingredients to make it)
  • White Frosting

What to do:

  • Bake Brownies according to package directions.
  • Let cool.
  • Spread with frosting.

Lemon and berries are such a good combination in recipes. I used a combo of both to create this simple Lemon-Berry Infused water. It’s a great option for summertime. It’s healthier than your regular soda and you can make it without other added sugars like you may sometimes find in the stores. You can serve this drink for one, two, three… people or for a crowd. You can even make it for your on-the-go drinking in your thermos or water bottle.

The days are hot and you’re hanging out with your family and friends in your backyard. Sure, it’s easy to grab a cooler of canned or bottled drinks for serving. That’s fine. But what if you want to go a little fancier & healthier with something homemade that your friends wouldn’t mind drinking? Berry infused water will be one of your best friends! It’s easy, a healthy option to soda, and will look pretty on your table. So grab some drinking glasses and a few ingredients and let’s get to work.

Recipe for Lemon-Berry Infused Water

Ingredients (smaller servings):

  • 1 Large Lemon
  • 1 to 2 Strawberries diced into pieces
  • Blueberries (about 10)
  • Cold Water
  • 2 Large Drinking Glasses
  • Cute Straws

What to do:

  • Add berries to glasses.
  • Add a slice of lemon to each glass.
  • Fill glasses with cold water.
  • Add a cute straw and top with an extra slice of lemon.
  • Serve.

To Feed a Crowd: For a larger serving, use a large clear pitcher (because you got see the pretty colors in it right)? Add the berries and lemon slices. Fill with water. Prepare a small bowl or small plate with extra slices of lemon. Have some clear (yes, clear) drinking glasses and straws for serving (straws can be optional but they are easier for kids).

Note: The longer the berries and lemon sit in the water, the tastier the water is going to be. If you’re serving right away, you may want to make it about 5 minutes ahead.

New Blog Design and a “Thank You” Giveaway

Hi friends! Happy Summer! How’s everyone doing? It’s been a while since we’ve last connected. Things have been such a worldwide these past few months. I’ve wanted to reconnect with you for a while but couldn’t get around to doing so. If you stopped by the blog and saw this image, then you most-likely saw that the site was down.

New Blog Design

We started off with a blog design maker-over with Smash Creative in February and was hoping to be done Mid-March. I thought that would have been the “perfect” time to do a Giveaway for my readers since it was also around the time of my birthday. But my blog wasn’t ready and my “perfect” blog timing was not God’s perfect timing. Unfortunately, we lost my dad and everything was placed on hold.

Losing Dad

We lost my father in March and waited until the beginning of May to bury dad and say our goodbyes. This long wait was mainly for travel purposes between families. My dad lived abroad so we along with siblings and other relatives had to travel from the U.S. Coordinating travel plans to accommodate everyone took it’s toll. I (along with my immediate family) was ready to travel the moment dad passed. Anyways, once everything was settled in that regards, we were able to move on, not in the sense of getting over it because there’s nothing like grieving a loved one’s lost but in the sense of trying to pick up ourselves and continue on.

Working to Finish the Blog Design

In the following weeks after everything was settled and we flew back home, husband back to work, kids back to school, real #momlife back to normal, I tried to finish off the blog design but it took way longer than expected (or was it to be expected)? Smash Team did a wonderful job with the site but there were many areas that needed to be tie-up on my end to get the blog up and running again. We’re here in June at the onset of Summer and I still have to finish off a few odds and ends. But you know what? I’ve decided that loose ends or not, we are just going to go live. I’ll keep fixing those little loose ends as I go along. The main work is done and that is what matters.

Using Summer Fruits & Berries

Red, White and Blue days are upon us and it’s time to burst out those summer fruits that make some great tasting desserts! Well, I just sort of made that up now but yes, it’s time to get out your favorite summer fruits and let’s make some desserts! Have an abundance of Fresh Strawberries you’ve probably picked or bought because they were inexpensive? This can be a good way to use Fresh Strawberries during the Summer.

In all seriousness, I have not baked a fruit pie in ages, except Apple Pies (we’re huge fans). I usually just the Marie Chandelier pies from Walmart’s freezer, I love the Berry Mix. In fact, I just threw out some leftovers I had in the fridge from about 1.5 weeks ago. Although I love this pie, I have to contain myself not to eat all in two settings. So I leave back some in the fridge, only to decide to throw out the rest days later (not sure it it was still good). But wait… what about your husband and kids, don’t they eat some too. The answer is yes and no. My kids won’t go near a fruit pie with a 9-foot pole! Well, take that back… our eldest has always loved Apple pie. But other than that, nothing else. Don’t even ask about our middle child. Nope, not happening. But if I bake a little Marie Chandelier pie and my husband is home, he’ll eat it. He loves pies – all kinds of pies that is. Where’s Baker’s Square when we need it? Oh boy, now I’ve gotten on a Rabbit Trail about pies.

Why Make Fresh Fruit Pies?

In any event, I had a can of Strawberry Pie Filling sitting in my pantry since last year. I had bought it to try making a Pretzel Pie (what do you call that Jell-O and Pretzel thing with whipped cream)? I don’t think it was the one I needed for that sort of dessert. I wanted the strawberries in syrup from the freezer isle but could not find it so I got this instead. It was my first one and it’s being sitting there. Every time I see it I thought I should do something with it. I don’t think it was expired. But then I could not come up with anything (to be honest.), except to make a strawberry pie. But then I’m not really a canned fruit type of cook so I decided to make that baby from scratch. Let’s just throw away that pie filling. Or do I still have it? I think not.

this is my second Strawberry pie, with the first one being made at home some 2 or 3 years ago (insert don’t know emoji). So I thought it would be a great idea to make another one to see how I like it. And let me tell you, cooked strawberries is not the easiest to eat. You don’t want that thing soggy. Yuck! That was why I never made another Strawberry Pie since I baked that first one. Not that I’ve mastered the art or anything but I thought, you know, let’s try this again and this time, cook that thing less. Or just top that pie with Fresh Sliced Strawberries in some sort of uncooked glaze. But then, at that point, I might as well just get some strawberries, slice them, and eat them without going through the whole baking pie hassle.

Do you know how long it takes to make a pie from scratch? OK. That’s what I thought. I guess there’s always pre-baked pie shells or pie dough and a can of fruit filling. But where’s the fun in that? I mean, I do use pre-baked pie dough but some times, a girl just go to go all out – if you know what I’m saying. You avoid the junk in some of these Canned Pie fillings (aka the loads of Corn Syrup and bulk of preservatives that no one can pronounce or never heard of before).

Fresh Strawberry Pie Recipe

Recipe for Dough:

  • 2 -1/4 Cups All-Purpose Flour
  • 1/2 Cup Cold Butter
  • 1 tsp Salt
  • 10 TBSP Cold Water

Directions:

  • 1.5 Bails of Strawberries (sliced)
  • 1 Cup Water
  • 1/3 to 1/2 Cup Cane Sugar
  • 2 TBSP Cornstarch

Topping: 

  • Extra Strawberries
  • Whipped Cream or Ice-Cream (or both)

Directions:

  • Measure flour into a bowl. Mix in salt.
  • Cut in the cold butter.
  • Use fingers to crumble until the mixture looks like tiny pieces.
  • Add water one TBSP at a time stirring with a fork.
  • Continue to add water (use a little more if needed) and mixing with fork until the dough comes together.
  • Form dough.
  • Wrap in Siren wrap, place in a bowl in the refrigerator

When ready to bake pie:

  • Preheat oven to 400 degrees.
  • Remove dough from the refrigerator. Let it sit out about 10 mins.
  • Roll out dough on a lightly floured surface.
  • Place dough in a pie dish. Trim edges (I used the extra and cut a few little cooker cutter shapes to make the word summer). You can use that extra around the pie shell before baking.
  • Bake pie shell for 10 mins.
  • Remove from oven and let cool while you prepare the filling.
  • Cook Strawberries and sugar in a skillet.
  • Boil Strawberries and Sugar (the strawberries will begin to release water once they’re heated up).
  • Cook about 5 mins.
  • Mix water and cornstarch and pour into mixture.
  • Stir and keep cooking about 3 more minutes.
  • Remove from heat. Pour into pie shell.
  • Bake about 20 minutes.
  • Cool then cut and serve. Add a little Whipped Cream or ice-cream to take it up to the next level. I personally loved the Whipped Cream version. It adds a little sweet to the pie. Oh men, so good. I had seconds right after I took  the photos. Then another slice the following day!

Braided Curly Extensions for Girls

I love seeing cute hairstyles on little kids, both girls and boys. I’m thankful I can do cool styles for our kids. These curly extensions I did for our daughter was one of her favorites and she looked very cute.

She loves having her hair in two ponytails so that’s the style I went for, but with several smaller braids on each side. The good thing about braiding little girls’ hair is that they can pretty much be anything one desires.

Here is how I did this Curly Braided Hairstyle

You’ll need:

  • a few packs of curly extensions – one color or a mix of colors (my daughter loved a hint of color)
  • Small rubber bands
  • Comb, brush, hair care products
  • Scrunchies, bubbles, or any kind of ponytail holders

Directions:

  • First, part (or separate) the hair in two down the middle using a comb
  • Second, gather one side with a scrunchie
  • Third, on the side that is loose, use the comb to part out a small section of the hair – beginning at the front, going upward, then stopping in the middle. Repeat that on the other side of the same section
  • Next, start to braid that piece you just got out. Once you’ve reached the end of that piece of hair where it was parted, keep braiding a bit further out. Then leave out some curls loose. Add a rubber band where the end of the braiding stopped so the braid won’t come loose. Makes sense?
  • Continue to do the same with the remaining front of the hair
  • Now, do the same with the sides and back, making sure to start from the ear line and neckline and going upward
  • Once you’re done with the one side of the head, remove the scrunchie to repeat the steps on the following side of the head.

That’s all there is to this style. It turned out too cute and she truly rocked it!

What’s more fun than blowing bubbles on a Warm Summer day out on the lawn? Well maybe there are more fun things to do but bubble blowing is just a blast for kids. Although I have learned how to make bubbles, I don’t always make them. But when I do, the kids have a blast blowing them to the biggest level they can. There is something about homemade bubbles that make everything seem larger.

You’ll need:

What to do:

  • Pour water into the bowl.
  • Add in the soap, food coloring, and white sugar. Stir to mix.
  • Slowly pour in Glycerin and then gently stir. Glycerin helps bubbles to not be so runny.
  • Add in a few drops of food coloring (optional), then stir.
  • Your bubbles are ready.
