Hot summer days call for lots of cooling down and WATERMELON eating! My husband and kids love watermelon and simply cannot get enough. So much so that one time my husband bought a watermelon and some other fruits for us just before he left for a business trip. I told him, I guess he wouldn’t have any of that watermelon when I cut it. To my surprise, he went back to the store that night to get some more stuff and came home with a small bowl of watermelon? He just had to have his share one way or another!! Can’t blame them, I love it too. Growing up I ate some very juicy organic watermelon from our garden (I think). I just don’t like storing a huge cut piece of watermelon in the fridge – takes up too much space.
Usually, we’d just cut the watermelon and go at it. But I thought it would be great to try a watermelon salad for a different taste. The kids didn’t want theirs mixed into a salad and that’s OK. Nothing better than fresh fruit, right?! But if you want to be fancy or look like you’ve made something for a summer party, make this easy watermelon salad (think 4th of July or some other summer get-together). You only need 3 ingredients!! The mix of mint and lime makes the watermelon tangy-ish yet brings out that freshness of summer taste!
Mint and Lime Watermelon Salad
Ingredients:
- 4 cups diced watermelon
- 1 tsp freshly squeezed lime juice (or bottled)
- 1 TBSP chopped mint leaves
Directions:
- Place watermelon in a bowl
- Add lime juice and mint leaves
- Gently stir until the lime juice mixes and the mint leaves evenly spreads
- Cover and chill until ready to serve
