OK – I don’t know what I did different this time than other times but these sure are gooooooood! I could not just eat one at a time. When my kids tasted it, they were amazed. One of them even compared it to Crumbl cookies – I mean, I will take that anytime. I did make a few adjustments to my Sugar Cookies this time though, I’m think they had a VERY positive effect on these cookies. I could not be happier.

For Dough:

  • 3 Cups Flour (I used Pillsbury)
  • 1 Cup White Sugar
  • 2 Sticks very soft Butter
  • 1 Egg (I left mine out about 4for a couple hrs before using, not on purpose but it might have helped)
  • 1 teaspoon Vanilla
  • 1/2 teaspoon Baking Powder

Directions:

Heat oven to 375 degrees. Line a baking pan with parchment paper. Mix butter and sugar until creamy. Add egg and Vanilla. Set aside. Mix Flour & Baking Powder together. Pour into butter mixture. Stir with a spoon until the dough comes together. Use hand to finish the dough. Roll out unto a floured surface. Cut with cutters. For X and O – Use a small circle cookie cutter for Os. Then a tiny piping cube to cut out a circle in the middle. Use a pizza cutter or knife to cut out a rectangular piece of dough, about 6 inches x 1 inch. Then cut equally in two. Layer pieces in an x shape. Place cookies on lined baking sheet. Bake 7 mins. Remove to cool completely. Frost and enjoy. Seriously. (No need to refrigerate). I made 3 batches, well I used 3 cookie sheets for these. You can check out these red ones here (affiliate links).

  • Frosting:

3-1/2 Cups Powdered Sugar 1 stick butter 1/2 Cream Cheese 1 tsp Vanilla 1 Tablespoon Milk + 1/2 Tablespoons more Cream butter & Cheese. Add Vanilla. Blend. Add Powdered Sugar and mix with a spoon first, then mix with mixer. Add 1 Tablespoon milk and then the 1/2 tablespoons milk. Mix until fluffy.

I made these as Valentines cookies but these will make a great Crowd pleaser for a any party with cookies – Birthday parties, seasonal parties, and special holidays such as Christmas. All you need to do is to change up the colors of the frosting and Sprinkles and other cookie decorations to match the event. Oh my, they are that good.
