Herb Roasted Chicken
I have made this deliciously-juicy chicken for my family and it’s always so enjoyable every time. It’s real tender and juicy and taste so good over rice. It’s also so very easy to make. All you need is an Instant Pot and a whole chicken and few spices plus some water. The gravy option just needs the sauce from the cooked chicken, a little flour and water.

How to Make Insta-Pot Roasted Chicken
Ingredients:
- 1 Whole Chicken
- 1 teaspoon each: Thyme, Garlic Powder, Onion Powder & Salt
- 1/2 teaspoon Black Pepper
- 1 Cup Water
- Olive Oil
Directions:
- Wash and Prep Chicken. Add a little oil to the Insta-Pot. Put in the chicken. Add spices. Pour water over chicken with seasoning.
- Set Insta-Pot to Poultry and let it cook.
- Once done, you can make the sauce right away or let the Chicken remain in the pot until you are ready to make the gravy. The insta-pot could be turned off manually or placed on warm manually or you could let it turn on automatically on cool down. It wills stay warm for a few hours.
- When ready to make the gravy, remove the chicken unto a serving tray. Spoon some of the sauce over the chicken to keep it moist.
- Set chicken aside.
Optional Gravy (but recommended)
For gravy: 1/2 Cup water, 1 Tablespoon All-Purpose flour, extra salt and pepper if needed.
- Over medium heat, pour the gravy from the cooked chicken into a saucepan.
- Mix 1/2 cup water with the flour until fully combined. Pour the flour mixture into the gravy.
- Stir continually until the flour and water mixture is combined with the gravy (this will prevent the flour from settling).
- Taste and add a little extra salt and pepper to taste, if needed.
- Remove gravy from heat. Pour over the chicken or into a small serving dish alongside the chicken.
- Rice goes good with this dish. Scoop rice into plate. Spoon pieces of chicken over rice or on the side of the plate. Add a little gravy. Yum!
