Gingerbread pancakes make a delicious breakfast and brings out a nostalgic taste during the holiday season. I know, its after the holidays but I didn’t get around to sharing my recipes prior so I’m just going to share them now.

Gingerbread Pancakes

The first time I made these this Christmas season, my husband commented on how good they were. He came back for more and I thought that was a sign that these were good. And they were were. It was a Cozy Saturday morning with steaming hot coffee to add to the comfort of home. OK, so maybe the coffee was not steaming hot but it was hot. The pancakes soft and “moist” (here’s a word I don’t like to use), but so tasty and not enough.

That Nostalgic Taste

Gingerbread pancakes brings out that nostalgic taste during the holiday season. Think of Gingerbread cookies and how they bring you joy to eat at Christmas time. It’s a similar experience with these pancakes. I made them twice and to be honest could have made more if I had gotten around to it for the holidays.

How to Make Gingerbread Pancakes


  • 1-1/4 Cup Flour
  • 1 Cup Milk
  • 1/4 Cup Molasses
  • 1 Egg
  • 1 TBSP Butter Melted
  • 1 TBSP Brown Sugar
  • 2 tsp Baking Powder
  • 2 tsp to 1 TBSP Ground Ginger
  • 1/2 tsp Cinnamon
  • 1/4 tsp Ground Clove
  • 1 tsp Vanilla Extract
  • Syrup and whipped cream for serving.


  • Mix together flour, baking powder, ginger, cinnamon, and clove. Set aside.
  • Mix together liquid ingredients. Add sugar and mix. Pour dry ingredients into wet. Combine.
  • Spray pancake griddle or skillet and cook pancakes as usual.
  • Serve.
