Freezer Cinnamon Rolls – Breakfast in Minutes!

Every now and then I want to make homemade Cinnamon Rolls but we all know how long that can take to make at breakfast time. You’ll have to be up early or start making them at least 2 hours before breakfast time. That’s my dilemma. I certainly don’t want to start them at 9:00am. If your kids get up early and eat breakfast early, consider the prep time.

So I figured I would make the rolls ahead and Freezer them for baking later. In this case, I baked these about 3 weeks later. I didn’t bake them earlier because we had travel and other breakfast and things already going. Plus it has to be a Cinnamon Rolls day, right?!

You could bake them the very next day. See tips below.

 Freezer Cinnamon Rolls Recipe

  • 3-1/2 Cups All Purpose Flour
  • 1 TBSP Yeast
  • 1/2 Cup Warm Water
  • 1/2 Cup Milk
  • 1/2 Cup Butter Softened
  • 1-2,Cup Sugar
  • 1 tsp Salt
  • 1 tsp Cinnamon

Filling

  • 1/Cup Sugar
  • 1/2,Cup Butter Softened
  • 1 Heaping TBSP Ground Cinnamon

Frosting:

  • 3-1/2 Cups Powdered Sugar
  • 1/ Cup Butter (1 stick)
  • 1/4 Cup Cream Cheese (1/2 a pk)
  • 1 tsp Vanilla
  • 3 TBSP Milk

Pour yeast into a large mixing bowl. Pour in warm water. Warm milk over low heat. Add in milk, salt, sugar, butter and cinnamon. Add flour. Mix with a spoon, then gather contents by hand and mix into to a dough. If you have a mixer with a dough attachment, you can use it for mixing until the ingredients form a dough. Turn out unto a floured surface and knead by hand for a few minutes. The dough should be smooth, not sticky. Place into a greased bowl. Cover with a clean towel about 1 hr. Punch dough down. Remove from the bowl and unto floured surface. Gently knead about 30 sec. Using a rolling pin, roll out dough into a large circle. Mine was the largest circle I’ve made into a dough. Paste butter unto rolled out dough. Sprinkle Cinnamon Sugar over butter. Roll up dough into a log. Cut into rolls. Line a baking pan with parchment paper. Place the rolls in the pan. Cover and place in refrigerator. When ready to bake, heat oven to 350 degrees. Remove rolls from freezer and place into the oven. Bake about 30 mins. The longer baking time will allow the rolls to thaw while slowly baking at a lower oven temp. If you bake it on too high of a temperature the rolls will be hard and most likely burned without being properly cooked.

The night (or some time during the day) before baking, remove rolls from freezer to fridge to thaw overnight. Let sit on counter about 45 minutes to 1 hr for further rising. Bake at 350 degrees about 20 mins.

Remove from oven. Cool rolls in pan for a few minutes before frosting. My family said they tasted good and I agreed. Kids will tell you whether they think something tastes good or not so I think we have a winner!
